St Valentine: Protector of Marriage

I've always known that Valentine's Day had something to do with a St. Valentine, but to be honest, I never really looked into it more than that. I guess I just assumed St. Valentine somehow shared God's love and was eventually martyred for it, and didn't worry about the details. But in my search for a cute video about St. Valentine to show my preschooler, I discovered some amazing facts about St. Valentine.
While there is no historical agreement of the facts of St. Valentine's life, the story perpetuated by the local clergy in the Italian city of Terni, where Valentine served as Bishop, paints a picture of Valentine as not just a protector of love in general, but specifically of Catholic marriage despite opposition from the non-Catholic government. According to this legend, in the 3rd century, the Roman emperor banned marriage, hoping more men would enter the Roman army if unencumbered by worry for a wife and child.

Today, marriage is again under attack by a secular government and broader culture. Beyond those attempting to dismantle the definition of marriage, many people are forgoing it altogether in favor of cohabitation. The legend of St. Valentine may be made up in the Middle Ages (the historical evidence indicates that's the most likely scenario, actually), but it can still inspire us to stand for Truth.

This Valentine's Day, let's remember St. Valentine's courageous stand for marriage and pray for strength for ourselves and our clergy to stand as valiantly as he supposedly did!

Dark Chocolate Cookies

In an attempt to find a good chocolate cut-out cookie recipe to make heart-shaped cookies for Valentine's Day, I stumbled upon a recipe on the Hershey's website that didn't work at all. But after a frantic call to my mom ("Mom, what do you do if a cookie recipe is like totally dry and crumbly...should I add milk?1?") and then a few modifications, I ended up with something actually delicious. It still didn't work as cut-out cookies, but as round blob cookies, YUM! We decided it was kind of like if Oreos didn't have the texture of cardboard. Soft and fluffy, but also deeply chocolatey, these were a hit with everyone at our house! So without further ado, here's MY version of dark chocolate cookies, perfect for Valentine's Day, or any day!

What you Need:
  • 3/4 cups butter
  • 3/4 cups sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1 1/2 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup dark cocoa powder
What you Do:
  • mix wet ingredients
  • add dry ingredients, then mix
  • drop rounded teaspoons and flatten with fork or spoon
  • bake at 325 degrees for 10 min
  • eat copious amounts
I'm planning to try it with whole wheat flour sometime soon to pretend to make it a little healthier to consume like a dozen of them all in one sitting. I'll update this post with how it works (or that it doesn't) after I try it!!

Cure for the Mondays-Feb 11, 2013

On Mondays I post ideas I've seen in the past week or so that made me laugh, smile, and want to create. I hope they brighten your day too, especially if you've got a "case of the Mondays"!

How adorable is this contstruction paper panda made of hearts? I think my 3 year old would have a blast making one!

Heart-shaped potatoes would sure win my affection!!

Don't tell my husband, but I'm making him these brownies from Smitten Kitchen, both the white chocolate and dark chocolate variations, for Valentine's Day later this week!

These raspberry swirl rolls would be a fun festively-colored breakfast option for this week (not to mention tasting delicious!)

Annnnnnd bonus points if you make them(or any cinnamon roll type treat) heart shaped

Where I've been hiding...

You may have noticed I sorta abandoned my blog for a bit. That's because this happened:



I'm now the proud mama of two adorable little boys!!!
A VBAC attempt that didn't result in a VBAC, followed by some jaundice and other issues has made it a wild ride. We're all home now and happy to be together!!
